Preparation
tungsan Mee Rebus Paste (890g) 1packets
Tungsan Mee Rebus Powder (120g) 1packets + Water 600ml
Water 2.4kg
Bean sprouts 400g
Boiled Eggs (shelled and sliced) 14 nos
Green Chilli (sliced) 120g (10pcs)
Fried Shallot 100g
Fried Beancurds (cut into cubes) 600g (5pcs)
Fried Dried Shrimp Skin 80g
Lime 14 nos
Coriander 1 stalks
Cooking Method
1. Add Tungsan Mee Rebus Paste into 2.5 Litres water. Bring to a boil and simmer for 15 minutes.
2. Mix Mee Rebus Powder with water, add into the above to thicken the gravy over low heat for two minutes. Stir until gravy is even.
3. Blanched Yellow Noodles and Bean Sprouts, drain away excess water, placed onto serving plate, pour Mee Rebus gravy over. Garnish with remaining ingredients and serve hot.
